  2. You need of Red Bell Pepper (sliced).
  3. Prepare of Green Pepper (sliced).
  4. It’s of Yellow Pepper (sliced).
  5. It’s of Aubergines (sliced or cubed).
  6. Prepare of Zucchini (sliced).
  7. Prepare of large Onions (chopped).
  8. Prepare of Milk.
  9. You need of medium Eggs.
  10. Prepare of Feta Cheese cut into small cubes.
  11. You need of Pecorino Cheese or Parmesan.
  12. You need of Oregano.
  13. You need of Salt and Pepper.

Colorful Veggie Tart instructions

  1. Dice or slice all the ingredients..
  2. In a large skillet pan add in 1/4 cup of Olive Oil. Start by adding in the onions, sauté and then add in the vegetables..continue by adding oregano, continue to sauté until all the vegetables have softened..
  3. In a large bowl add the eggs, the milk and whisk the ingredients until nicely combined..
  4. Add feta and pecorino cheese..
  5. Add the vegetables into the bowl and mix all the ingredients together..
  6. Place the phyllo dough into your tart dish..if it is store bought no need to add olive oil to the dish. If you decide to make your own dough you must brush pan with olive oil before placing in the dough..
