  1. Prepare 4 of Squash.
  2. Prepare 1 lb of Fresh whole green beans.
  3. Prepare 4 large of portobello mushrooms; cleaned & sliced.
  4. Prepare 2 lb of Fresh halibut.
  5. You need 1 tbsp of Pepper.
  6. Prepare 1 tbsp of Garlic salt.
  7. You need 1/2 cup of Olive oil.
  8. It’s 1 of Lemon.
  9. You need 4 tbsp of Olive oil.
  10. Prepare 1 of Lemon zest.

Grilled Squash & Halibut w/ Green Beans & Portobellos step by step

  1. Slice squash lengthwise in 1/2" thick pieces and set aside.
  2. Mix 1/2 cup of olive oil, pepper & garlic salt and baste squash and grill in ribbed pan until tender.
  3. Cut halibut into about 1" to 1 1/2" pieces.
  4. Heat 2 tbsp olive oil in pan and cook halibut with lemon juice.
  5. Heat remaining 2 tbsp. olive oil in another pan and sauté green beans & mushrooms. Season to taste with salt & pepper..
  6. Place squash on plate and top with halibut, green beans, & mushrooms..
  7. Sprinkle lemon zest on top for extra pop.
